It is not clear which is the actual question, but I think I think I can give you a hand from what I have studied in phonetics:
1) The symbol for the first segment in "these" is "θ"
2) Giraffe: Simbol is "dʒ"
3) Jury: Same symbol as giraffe
3) Quill: Symbol is "kw"

As regards the category, you need to group them according to the category they belong. (For instance, whether they are plosives, labiodental, bilabial, etc) I don't remember exactly all the categories, but I think "θ" es labiodental, "t" is plosive, etc...
The ones that do not belong are:
1 [θ t h ʒ] because ʒis voiceless.
3 [j b k v] j represents a vowel sound like in "new" /nju:/ or in "year" /jɪe(r)/
[d g s z t] it depends on what features you take into account: either s and t are voiceless (and the rest are voiced), or s z are sibilant and all the others represent plosive phonemes.
