I would translate it as "condiciones intrínsecas del huésped". It refers to the state of the host.
For instance, a hungry animal, or one that is infected with parasites, or stressed is not going to be affected by the virus in the same way. Some hosts have weakened immune systems due to whatever reason not related to the virus itself.
In the sentence probably the birds of a certain age are more likely to be infected.
