I am after some help in translating the James Dean quote (below) into spanish.
I have had a go but I would like to double check I have got it correct.

“Dream as if you'll live forever, live as if you'll die today.”

Yes, it does mean "tomorrow", but the most used phrase is with that word: "vive como si fueras a morir mañana" (at least here in Argentina)

I don't think it changes the idea that the phrase tries to convey...however, if you want to be literal, you would have to use "hoy"

"Sueña como si fueras a vivir para siempre, vive como si fueras a morir hoy"

Personally, I don't think the literal translation sounds bad at all.

The literal one sounds good to me too! Maybe because I think that it conveys the idea of what was the meaning of life for James Dean (i.e., living in the fast lane).
