Hi Mike. The phrase you're looking for is "no manches", or literally, "don't stain". It's a cleaner version of the summarily Mexican phrase "no mames", or literally, "don't suck tit." Both mean "don't f*ck around," "don't be a jerkoff," "holy sh*t!", "pull your head out of your ass," "get outta here!," etc. Basically, exclamations of incredulity.

I thought "f*ck off", "don't f*ck around" and such expressed annoyance and meant "don't bother me" rather than "I don't believe you".

"f*ck off" can be a strong way to say "don't bother me", or it can be a way to express anger, such as "f*ck you".Depending on familiarity and context can also be a joke or a mild expression of annoyance. "Don't f*ck" around is different, it means "don't play around", or "you should'nt do that" and depending on famialarity and context can vary in intensity, but it generally denotes extreme annoyance. In talking to some mexican friends, I am not sure I believe the other explanations for "no manches". I think it means "really, "you don't say", or "no sh*t" ps. I DO know american slang real well.
