Yes, I'd say it's equivalent to "blow your mind" or "blow you away".

Oh, and you could even change the last word and make it "me vuela la cabeza", or, even better, "me vuela la capelu".

I'ts mostly refered to the head rather than the hair or wig on it.
And in this particular sense it means the shape of the Mate fruit that resembles a human head :

This is getting quite extreme, if you ask me. So, "Me voló el gato"? Interesting, to say the least.
